Tall, soft, and airy scones with a bakery-style rise and texture

Ingredients

2 cups all-purpose flour
3 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup very cold butter
1/2 cup cold milk
1/4 cup cold cream
1 tsp vanilla extract

Instructions

Prepare Dough

Preheat oven to 200°C.

Mix dry ingredients.

Grate cold butter and mix quickly.

Add milk, cream, and vanilla. Mix lightly.

Shape & Chill

Fold dough 2–3 times to create layers.

Shape thick (3–4 cm height).

Chill for 10 minutes.

Bake

Cut into large pieces.

Bake for 15–18 minutes until tall and golden.

Notes

Keep all ingredients cold.
Do not overwork dough.
