Classic Lebanese-style garlic emulsion sauce that pairs perfectly with grilled meats and Al Faham.

Ingredients

1 cup neutral oil (sunflower or canola)
6–8 large garlic cloves
1 teaspoon salt
2 tablespoons fresh lemon juice
2–3 tablespoons ice water (as needed)

Instructions

Emulsion Method

Add garlic and salt to food processor and blend until smooth.

Slowly drizzle oil in a thin stream while blending continuously.

Once thickened, add small splash of lemon juice.

Continue alternating oil and lemon juice until fully incorporated.

Add 1–2 tablespoons ice water to lighten texture.

Blend until thick, white, and fluffy.

Notes

Add oil slowly to prevent breaking.
If sauce splits, blend into 1 egg white to re-emulsify.
Refrigerate up to 7 days.
Flavor becomes milder after 24 hours.
